new GF recipe

Okay, so now that our meals (for dinner) are gluten free, it's not easy to just throw something together. Don't get me wrong, it doesn't take lots of planning time, I just have to have a menu and all of the ingredients handy. So, as a side note, if I don't purchase ingredients with gluten then cooking becomes easier and less worrisome. After all, I don't want to make Tim sick. Anyway, the other day the girls and I had a busy day of playing and I lost track of time and forgot to thaw the meat I planned on using so I got creative and made up my own dish....believe it or not, it turned out really good. So good in fact that I already made it again. It's quick, easy, inexpensive, and delicious!
Ingredients:
3 gluten-free chicken spinach asiago cheese sausages (got those at Sam's Club-so yummy!)
1 bag of frozen pepper&onion stir fry (fresh peppers and onion would be even better if you've got them)
2 Tbs oil (I used canola because I was out of EVOO)
1 monstrous big heaping Tbs of minced garlic (I never really measure garlic)
dash of sea salt
1 cup of Jasmine rice cooked according to package directions

So here's what I did:
1. Put rice on to cook while fixing remainder of dish. (watch that rice, it'll boil over as soon as you look away)
2. Heat oil in large pan or wok...throw in the garlic and sea salt. Saute until garlic is nice and aromatic and browned a little
3. Add peppers and onions..saute until they are tender-crisp (or however you like 'em)
Meanwhile slice sausages into half-moons.
4. Add sausage to veggies and cook until sausages are lightly browned.
5. Finally, add perfectly cooked rice to the wok, stir and cook a few more minutes, then serve piping hot!

One dish meal... meat, veggies, rice. Add a little heat with crushed red peppers or hot sauce. Tim really enjoyed this and so did I. All gluten free and it was done in less than 20 minutes. I don't have a name for it, but I will definitely be making this again. Maybe next time I will make it with a different type of sausage. Although I do enjoy the chicken spinach asiago sausage. So there you have it, my own creation. Sorry there are no finished product pictures...we ate it all up, maybe next time :o) Any recipe name suggestions are welcome!

Sounds GREAT!!! Do you have a good GF cookbook? I know that there are some that I have seen that are great (well that is what the my friend that I sent it to said;)

I have you on my list to e-mail today. I am going to send you info on how to make paper. Lots of steps, but lots of fun and EASY!!!

I don't have a GF cookbook, I usually just adapt my favorite recipes by replacing the flours, breads,etc. with GF flours and breads.
My MIL has lots of GF cookbooks, but they seem overwhelming and labor-intensive, but I'm open to suggestions if your friend recommends a good cookbook.
Oh, and thanks in advance for sending my the paper making info. I'm pretty excited!

Way to be creative on the fly! It's looks delicious! We are huge sausage fans! I wonder if they sell the same stuff and Costco? We are not GF but this recipe sounds tasty!

I'm pretty liberal with the garlic too! I love it!

I think it would be great with any type of sausage. I plan on trying a different kind the next time I make it. Oh, and it's nice to know that there are other people that like lots of garlic :o)
